Esta mañana, antes de ir a trabajar, me he pasado por un clásico del barrio de la Barceloneta a desayunar: Can Paixano.
Can Paixano es uno de aquellos locales en Barcelona que deberían ser patrimonio de la humanidad, ya quedan muy pocos sitios donde poder desayunar como se hace en este local; bueno, bien de precio, honesto y muy peculiar. La mayoría de estos lugares han muerto, primero con las olimpiadas (se cargaron todos los merenderos de la Barceloneta para \"dignificar\" la playa) y después con la tontería inmobiliaria y la llegada del Euro que se ha cargado el resto de lugares de este tipo de Barcelona.



En este bar - tienda (sí, venden embutidos, conservas y su famoso cava) siguen haciendo los bocadillos igual que cuando mi padre me llevaba a desayunar con solo 6 años, y los precios se han mantenido muy correctos a pesar de la entrada del euro, hecho que en la mayoría de bares han aprovechado para subir los precios y bajar la calidad.

Para que nos vamos a engañar, la primera impresión al entrar en Can Paixano es la de un local oscuro y mugriento, es verdad, pero en cuanto pedimos el primer bocadillo se nos pasan todos los males y manías que puedan provocarnos sus gastados suelos y el olor a embutido. Tienen muchas variedades de bocadillos, raciones de embutido y conservas, que casi todo el mundo toma acompañados de una copa de cava rosado que es el típico de la casa.

Mi desayuno de hoy ha sido el siguiente:

Bocadillo de sobrasada con roquefort. (1,95€)
Lo hacen a la plancha, pero primero tuestan el pan y meten la sobrasada y el roquefort directamente encima del hierro candente, con lo que el queso y el embutido se tuestan a diferencia de otros sitios donde el proceso consiste en cocinar el relleno dentro del pan, con lo que se pierde la textura y el sabor tostados.

You can see the tapas tradition, from its simple beginnings to its most elaborate current form, at this quirky restaurant. A representative of the fourth generation of the Quim family works behind the counter in a space about the size of a standard living room. The walls are lined to the ceiling with bottles and cans, the bottles mostly of wine — some quite inexpensive, some unknown, some famous — the cans, of vegetables, seafood and meat.

Standing in a crowd around the stainless-steel counter, glass of wine or beer in hand, you may get a piece of good bread with some garlicky beans on it, or little assemblies of ham and tuna; mushrooms, butter and tuna; pressed beef with a mix of tomato jam (this, very sweet, is fantastic) and tapenade; bacalao in a few forms; an odd, sort of New Yorkish combination of cream cheese, smoked salmon and honey; a piece of toasted bread with a mussel, that tomato jam again and a spoonful of caviar.

Mr. Quim improvises as many as a hundred types of these montaditos a night, on the spot, from the ingredients spread in front of him. There are also classic tapas like potato croquettes, fried empanadas or cheese with sweet grilled peppers, well executed. The whole meal here will take you a half hour and, though tapas are not, in theory, lunch or dinner, it’s unlikely you’ll go out for a “real” meal after this.
